Comme Ça Offering Louis XIII Dinner

In a town with so many great chefs, I would never dream of naming a favorite. But I honestly don’t think there’s anyone in town as ambitious as Brian Howard at Comme Ça. He probably has the top in-house charcuterie program in Las Vegas. Every Wednesday he offers a special offal tasting menu. And tomorrow, he and David Myers will unveil their new “bistronomy onomy menu.” (I promise pictures on Wednesday.) Now we receive word that Howard and his boss will offer a special Remy Martin Louis XIII dinner on March 1 and 2..
The six course meal with wine and cocktail pairing, priced at $495 a person, will take place in the restaurant’s private dining room. Here’s the menu:
Nebraska Waygu Beef Tartare with black pepper vodka crème fraiche, crispy hollandaise and parilla
Bearboat Pinot Noir
Ultra Rare Big Eye Tuna garnished with green peppercorn, ibérico chutney and seawater gelee
Piper Heidsieck Sparkling Rosé
Shaved Foie Gras topped with a black truffle, gingerbread crisp
Macallan Negroni
Cedar Wood Smoked Wild Boar with squab, pig panna cotta and foraged greens
Penicillin Cocktail
Burnt Orange Claflouti made with aerated smoked chocolate, chestnut pastry cream, frozen hazelnut meringue and preserved meyer lemon ice cream
