New Chef In The Kitchen At Fleur

It’s hard to keep track of the chefs in this town without a scorecard sometimes. When I visited Fleur by Hubert Keller recently, the chef sent me out some new dishes, which I wrote about on this blog. Based on my conversation with the servers, I erroneously believed Chef Paul Meesawat was the man in the kitchen. I’m not sure whether I mis-heard someone, or whether someone misspoke. But I got it wrong. Meesawat is no longer with the restaurant.
The truth is, there is a brand new chef interpreting Keller’s vision at Mandalay Bay. His name is Ryan Primo Nuqui, and he most recently served as Executive Sous Chef at Yellowtail. He’s also worked at Shibuya, the old Fleur de Lys and Postrio. And he’s the guy responsible for the wild dishes pictured below. My apologies to everyone.
